Here’s an easy weeknight dinner to showcase your fresh summer vegetables!
If you’ve ever watched Disney’s Ratatouille, we’re certain you’ve wanted to recreate this classic dish once or twice. Here, we feature a sheet-pan version that will taste just as delicious while highlighting the flavors of fresh summer produce.
Like many other vegetables, zucchini is a good source of Vitamin C, which may help disperse free radicals in the body and support skin health. The anthocyanins in eggplants contribute to the purple hue of the vegetable and may also help prevent chronic disease and free radical formation.
While this dish can be enjoyed on its own, feel free to pair it with grilled chicken tenderloins or crusty, whole-wheat bread.
