Shawarma is said to have originated in Turkey and is enjoyed throughout the Mediterranean and Middle East areas. Traditionally, it consists of spiced meats, but this recipe takes a plant-based twist and replaces the chicken, lamb, beef, or turkey with chickpeas!
Make the chickpeas and dressing ahead of time and store them in the refrigerator for easy workweek lunches! Serve with a simple chopped tomato and cucumber salad and you have a filling, nutritious meal!
Pro tip: store the chickpeas, dressing, and pitas separately to avoid soggy wraps.
