Portobellos with Goat Cheese & Spinach

Feeling a little fancy this week? We suggest putting together these savory Portobello mushrooms with fresh tomatoes and goat cheese. 

Tomatoes, garlic, and spinach are well known for their vitamin, mineral, and phytochemical content that supports their antioxidant capabilities.  Portobello mushrooms contain a decent amount of potassium, which helps enable our nervous system to function properly.  4

Serve these tasty portobellos with mixed greens or warm crusty bread. 

These make for an excellent appetizer or entrée!
