This recipe is perfect to add to your weekly meal prep collection! This simple, make-ahead Mediterranean grain bowl can be customized and offers various nutrients to help fuel your afternoons. 

Bulgur is a grain found in many Mediterranean-inspired dishes, like tabbouleh and pilaf.  This nutty grain is packed with protein, fiber, vitamins, and minerals.  Bulgur is not gluten free, so substituting quinoa or another gluten-free grain would be recommended for those with sensitivities.  

We suggest serving this bowl with marinated chicken or grilled salmon, chopped cucumbers, and a dollop of low-fat Tzatziki sauce.
