Hang on to the flavors of summer with this refreshing pasta salad!
As we mentioned last week, August (and summer in general!) flew by. We’re holding on to every bit of summer as the fall months creep in, and this pasta salad is helping us do just that!
This recipe is perfect for those back-to-the-office lunches, or for meal prep when working from home. It is quick, filling, and so easy to customize! The ingredients are packed with vitamins, minerals, and other micronutrients along with some healthy fats from the avocado, olive oil, and feta!
We suggest using whole wheat or chickpea pasta for an added serving of whole grains or protein. Throw in some shredded chicken, salmon, or chickpeas for a solid protein source!
